Transform extra stuffing into a take on Tuscany's pappa al pomodoro, the silky tomato soup thickened with bread. This works best using stuffing that doesn't contain meat, sausage, or oysters.

Ingredients

  • 1 cup finely chopped onion

  • 6 garlic cloves, minced

  • 1 28-ounce can crushed tomatoes

  • 1 14 1/2 ounce can diced tomatoes

  • 4 cups reduced sodium chicken broth

  • 2 cups leftover stuffing, chopped if necessary

  • Grated parmigiano reggiano cheese

  • Fresh basil

Directions

  1. In a 4- to 6-quart pot heat 3 Tbsp. extra virgin olive oil over medium. Add onion and garlic and cook, stirring occasionally, until aromatic and translucent, 6 to 8 minutes.

  2. Add the crushed tomatoes, diced tomatoes, and 1/4 tsp. black pepper. Add broth. Bring just to boiling; reduce heat. Stir in stuffing; heat through. Remove from heat.

  3. Using an immersion blender, puree soup. Season with salt and additional black pepper. Top servings with cheese, a drizzle of additional olive oil, and the basil.
